Easy Healthy Quesadillas

I have been eating this pretty much every day this week. It is just that good. The best part is it is super easy and really healthy too! 
1 cooked sweet potato (mashed)
1 can black beans 
Juice from 1 lime
Salsa to taste (about 1/4 cup)

Mix together 

Spread onto a whole wheat tortilla
Add grated cheese & sliced avocado
Cook on a frying pan until golden brown on both sides
I eat my just like that but my husband likes to add a little sour cream and salsa on top.

Enjoy! 

 It really is so simple and really yummy. Definitely a new favorite in our house!
