Savory Pork Chops

Monday, March 18, 2013

I've modified this recipe a lot and finally feel like I got it just right with this one. It is definitely a favorite at our house!

Lightly dust pork chop with fresh ground pepper

Squeeze about 1/2 cup dijon mustard into ziploc bag

Place pork chop in bag and massage until chop is completely covered

Let marinate for about about 45 min

*Optional - Crack 1 small egg and mix in with dijon mixture. This will help the bread crumbs stick better
In shallow bowl combine 1 cup bread crumbs, 1 tbsp parsley, 1 tbsp rosemary, dash of salt, pepper & garlic powder

Roll pork chop in seasoning until completely covered

On large frying pan sear each side of pork chop in 2 tbsp of coconut oil until golden brown (2-3 min)

Heat oven to 450 F

Place pork chop in glass baking pan and cook until juices run clear (make sure to keep an eye on it.

Time varies greatly depending on the thickness of your cut. Mine has cooked anywhere from 20-45 min)
